Directions
Step 1
Heat olive oil in a medium saucepan over medium heat.
Step 2
Add red onion, garlic and ginger and sauté until onions begin to soften, about 2 minutes.
Step 3
Add long grain and wild rice and stir for 1 minute.
Step 4
Add peppers and chicken stock and bring to a boil. Cover and simmer until rice is tender and chicken stock has been absorbed fully, about 15 minutes.
Step 5
Stir in green onions. Remove from heat and let stand 2 minutes.
Step 6
Serve with fresh lime juice squeezed over top.
