- torn Romaine lettuce

- coarsely chopped fresh basil leaves

- watermelon cubes, seeds removed

- Vidalia onion, thinly sliced
- 1/3 cup
- coarsely crumbled feta cheese
- 75 mL
- 1/3 cup
- pitted black olives
- 75 mL
- 2 tbsp
- olive oil
- 30 mL
- 1 tbsp
- white balsamic vinegar
- 15 mL
- To taste, salt and pepper
Directions
- Step 1
- Divide lettuce, basil, watermelon cubes, onion, feta and black olives among four pretty serving plates.
- Step 2
- Blend olive oil and balsamic vinegar.
- Step 3
- Drizzle onto salads. Season with salt and pepper to taste. Savour!
Tip
Replace watermelon by raspberries, feta cheese by grated black goat cheese, and balsamic vinegar by raspberry vinegar.
