- quick oats, plus more for dusting biscuit tops

- 1/2 tsp
- salt
- 2 mL
- 1/4 tsp
- ground cayenne pepper
- 1 mL
- 1 tbsp
- sugar
- 15 mL
- 2 tsp
- baking powder
- 10 mL
- 1 tbsp
- finely chopped fresh chives
- 15 mL
- 2/3 cup
- shredded old Cheddar cheese, loosely packed
- 150 mL
- 1/4 cup
- cold unsalted butter, in small pieces
- 60 mL
- 2/3 cup
- buttermilk, plus a bit more forbrushing biscuit tops
- 150 mL
Directions
Step 1
Preheat oven to 425°F (220°C). Combine flour, oats, salt, cayenne pepper, sugar and baking powder in a bowl and mix well. Add chives and Cheddar and toss until evenly distributed.
Step 2
With two knives or cool fingertips, mix in butter lightly until mixture resembles coarse meal. Add buttermilk and mix just until combined.
Step 3
Turn mixture out onto a floured countertop and form into a disc 1/2 in. (1 cm) thick. Brush with a bit of buttermilk and dust with oats. Cut into 8 wedges, transfer to a parchment paper-line baking sheet and bake for 15 to 20 min. or until just golden.
