Ingredients

- bunch fresh mint, divided
- 4 tsp
- superfine sugar
- 20 mL
- 4
- limes, washed and halved crosswise
- ice cubes
- chilled soda water
Directions
Step 1
Add 8 to 10 mint leaves and 1 tsp (5 mL) sugar to each of 4 tall glasses; using muddler, smash and grind until mint is fragrant.
Step 2
Squeeze juice of 1 lime into each glass and stir. Drop 1 of the squeezed half-limes into each glass. Add ice cubes; top with soda water and garnish with sprigs of mint.
Tip
Add 1 oz (2 tbsp/30 mL) white rum to each glass. Don't have a muddler? The end of a wooden spoon works well.
