Directions
Step 1
Rinse rice in cold running water 2 or 3 times and drain well, if desired. Combine rice, coconut milk, broth, mandarin juice and salt in a pot over medium high heat. Bring to a simmer while stirring, cover and reduce head to low. Cook until liquid has been absorbed, about 10-13 minutes. Remove from the heat, let stand 5 minutes. Gently fluff with a fork. Stir in the mandarin zest and toasted coconut, reserving 2 tbsp (30 ml) of the coconut for garnish. Serve and garnish with finely sliced green onions.
