Directions
Step 1
For the filling: With the rack in the middle position, preheat the oven to 180°C (350°F).
Step 2
In a large pot, combine the sugar and cornstarch. Add the blueberries and mix well. Bring to a boil, stirring often. Divide the mixture between four 1 ½-cup (375 ml) ramekins.
Step 3
For the dough: In a food processor, combine the flour, sugar, baking powder and salt. Add the butter and pulse a few times, until it forms pea-sized pieces. Add the egg and milk. Pulse until the dough has a lumpy texture. Place the dough over the blueberries of each ramekin.
Step 4
Place the ramekins on a baking sheet. This will prevent a mess if the fruit overflows during baking.
Step 5
Bake for 35 minutes or until the dough is nicely browned and a toothpick inserted in the centre comes out clean.
